Custom Merge Fields For Specific Email Appeals

At SIUE we have a Giving Circle named "Chancellor's Circle" in which to qualify, you have to give $2,500 cumulatively in the fiscal year (Ours is July 1 - June 30) to qualify to be a member and receive Chancellor's Circle Status for the following Fiscal Year including special event invites and a small holiday gift.
As we are in the last month of our current fiscal year my team wants to encourage those who are within $1000 of qualifying to give more before the end of June and qualify. They would like to be able to send an email but include the specific amount they need to give to qualify for membership the following year.
To do this, in my mind it would make the most sense to allow clients to include additional custom merge fields in the data file when doing a manual excel file email group import.
This is just my first thought and I am sure there are many ways to accomplish this idea!
