It would be great to be able to disable the QR codes attached in confirmation emails. We do not use them to check guests in and many guests are confused by them.

I believe this is already a feature! You can toggle off the check in kisok, "When turned off, guests will not receive their QR code required for quick check-in. The kiosk will also be inaccessible for this event."
